Mediterranean zucchini salad with white cheese


A nice Mediterranean recipe. The vegetarian side dish contains the following ingredients: courgettes, olive oil, lemon juice, cherry tomatoes (250 g), pine nuts, arugula (lettuce, 75 g) and white cheese (crumbled).

Directions

  1. Remove the hard bottom of the courgettes and cut them lengthwise into long strips.
  2. Spread the zucchini thinly with oil and grill in 2-3 portions in 2 minutes per side until done.
  3. Turn them half a quarter of a turn so that a diamond pattern is created.
  4. Drizzle the slices of warm zucchini with lemon juice and sprinkle with salt and (freshly ground) pepper.
  5. Also brush the to thin with oil and grill them for 2-3 minutes in the grill pan.
  6. Roast in a frying pan with non-stick coating the pine nuts in medium heat on golden fire for 3-4 minutes, then let them cool down.
  7. Scooped rocket salad with the slices of zucchini and laid it on.
  8. Sprinkle the salad with pine nuts, cheese and (freshly ground) pepper to taste.
  9. The salad can be served lukewarm or cold..
