Preheat the oven grill to the highest setting. Remove the beans and cut into 3 cm pieces. Boil the string beans in a pan with plenty of boiling water for 8-10 minutes until al dente. Heat 2 tablespoons of olive oil in a frying pan and fry the potato wedges for a shoving brown.

Meanwhile, halve the tomatoes and put them in the oven dish. Spread salt, pepper and some olive oil. Put the tomatoes 10 cm under the hot grill and toast them for 4-6 minutes until they start to soften.

Beat the eggs with a little water and grated cheese. Heat the butter in a frying pan. Pour in the egg mixture and let it solidify into an omelette. Always slide the solidified egg to the center and allow the still liquid egg to flow to the edge. Serve the omelet with the tomatoes, string beans and potatoes next to it.
