Cheese tortellini with spinach, almond and ricotta

Cook the tortellini according to the instructions on the package.

Puree the almonds with the oil, stock and lemon juice. Add the spinach and half of the ricotta and puree into a green sauce. Season with salt and pepper.

Mix the lemon zest through the rest of the ricotta. Drain the tortellini, scoop it through the green sauce and heat for 1-2 minutes. Before serving, serve some lemon ricotta on the pasta.
