Dessert of fresh and frozen blackberries, full curds of lemon and creamy butter cream butter cookies decorated with soft pearls.

Put the blackberries in a high bowl and puree with the hand blender.

Rub the fruit puree through a ball sieve and collect the sauce (blackberry coulis) in a bowl.

Mix 3 tbsp bramen coulis through the lemon curd. Stir the icing sugar through the rest of the coulis.

Put the cookies in a plastic bag and roll with the rolling pin into crumbs. Spoon the cookie crumb into the glasses.

Spread the blackberry lemon curd and the rest of the curd in layers. Spoon a layer of black currant on the curd.

Garnish with the fresh blackberries and soft pearls.
