Directions

  1. Cook the rice. In the meantime, clean the peppers and cut them into pieces. Let the pineapple drain and collect the juice.
  2. Heat the oil in a frying pan and fry the peppers and onion for about 2 minutes. Add the chicken (as much as possible without the marinade) and cook for 2 minutes at a high setting.
  3. Add the marinade and pineapple and simmer for about 5 minutes, until the chicken is done. Add some pineapple juice to taste.
  4. Divide the rice over 4 bowls and scoop the chicken with the sauce on it. Garnish with some parsley.
