Chicken salad with mango and goat's cheese
Chicken salad with mango, spinach and goat's cheese.
Roast the pine nuts for 3 minutes in a frying pan without oil or butter. Let cool on a plate.
Peel the mango and cut the flesh into strips of ½ cm. Slice the garlic.
Heat the oil in a wok. Add the garlic and spinach in parts. Let it shrink and season with salt and pepper. Drain in a sieve.
Cut the chicken into strips. Cut the cucumber into slices.
Heat the oil in a frying pan. Sprinkle the chicken with salt and pepper and bake in 4 minutes brown and done.
Meanwhile, spread the lettuce and cucumber over the plates. Spoon the spinach and crumble the goat cheese over it.
Add the chicken and mango. Sprinkle with the pine nuts and drizzle with the vinegar.
