Preheat the oven to 200 ° C.

Heat two spoonfuls of olive oil in a pan with a thick bottom.

Add half of the onion and half of the garlic and cook on soft heat for four minutes until they become softer and smell nice.

Take care that they do not turn brown.

In the meantime, cut the tomatoes into pieces and add them with the thyme to the onion mixture.

Bake for two minutes and stir regularly.

Then put the lid on the pan and let the tomatoes simmer gently in a quarter of an hour until they are soft and release their moisture.

Put the hand blender into the pan and puree everything into a nice smooth sauce.

Let it boil for a maximum of ten minutes if necessary until the thickness is good.

When the sauce is very sour, add a teaspoon of sugar.

Divide the remaining olive oil into the baking dish.

Rub the chicken pieces with salt, freshly ground pepper and Italian herbs.

Put the pieces of chicken in the bowl and pour the newly made tomato sauce over it.

Cover the chicken with slices of mozzarella and sprinkle the oregano or parsley and Parmesan cheese over it.

Slide the dish into the oven.

Fry the chicken in half an hour until done and let the cheese turn golden brown.
