Chickpea salad with chorizo and tuna
Preheat the oven to 200ºC.
Heat 2 tablespoons of olive oil and fry the chorizo and paprika. Spoon this with the shortening through the chickpeas.
Add the tuna, olives, pesto, possibly extra olive oil, salt and pepper to the chickpea mixture. Heat the bread rolls for about 5 minutes in the oven.
Spoon the arugula through the salad and serve the salad with the bread and some olive oil to dip.
