Chickpea stew with white cheese cubes
A nice Mediterranean recipe. The vegetarian main course contains the following ingredients: zucchini, onions, garlic, olive oil, soft paprika powder, ground cumin (djinten), ground coriander (ketoembar), peeled tomatoes (400 g), chickpeas (400 g) and white cheese cubes.

Zucchini wash, clean and cut into thick slices.

Cut slices into quarters.

Peel onions and cut into pieces.

Garlic peel and coarse chop.

Heat oil in pan.

Onion and zucchini for about 5 minutes before baking.

Stir in paprika, cumin, coriander and garlic and bake for about 1 more minute.

Add tomatoes with juice and let it boil.

Blend the mixture for approx.
-
20 minutes.
-
Drain chickpeas in the sieve and create vegetables.
-
Warm vegetables gently for approx.
-
10 minutes.
-
Season with salt and pepper.
-
Let cheese cubes drain.
-
Chick peas with vegetables in four deep plates.
-
Distribute cheese cubes.
-
Serve with couscous or pita bread..
