Chicory salad with grapefruit
A tasty recipe. The vegetarian side dish contains the following ingredients: red grapefruits, chicory, extra virgin olive oil, cashew nuts unsalted, spring onions ((3 pouch) and in rings).

Use a sharp knife to cut the skin and the white skin of 2 grapefruits. Cut the segments of flesh from the membranes. Squeeze the third grapefruit and collect the juice in a bowl.

Halve the chicory in the length. Remove the hard core, cut the praise into long strips and spread over a low scale. Divide the wedges of grapefruit over them. Mix the grapefruit juice with the oil and season with salt and pepper. Sprinkle over the salad. Sprinkle the nuts and spring onions just before serving.
