Directions

  1. Boil the potatoes in about 20 minutes. In the meantime, cut the inner core out of the chicory stalks and cut the praise into narrow strips.
  2. Heat the milk. Drain the potatoes and make with the milk, nutmeg to taste, salt and pepper an airy puree.
  3. Put the goat cheese and the chicory strips through and keep warm.
  4. Meanwhile, bake the bacon cubes in a dry, hot frying pan.
  5. Divide the bacon before serving over the stew.
