Beat the eggs with pepper and salt in a bowl.

Heat up some oil in 2 large frying pans. Divide the egg over the pans and cook over medium heat in 5 min. 2 omelets.

Turn them halfway. Put the omelettes on a plate and keep warm under aluminum foil.

Heat the oil in a frying pan. Stir fry the vegetables for 5 minutes together with the ketjapmarinadeen pepper and salt.

In the meantime, heat the tomato frito with the ginger syrup in a saucepan.

Halve the omelettes and place ½ omelettes on the plates. Divide the vegetables and fold the omelette double. Serve with the sweet tomato sauce.
