Chive blinis with salmon
Blinis made of poffertjes mix, baking powder, milk, egg, lemon zest and chives with a topping of crème fraîche mixed with horseradish and smoked salmon.
Put the small pancake mix and baking powder in a bowl and add the milk and then the egg, while stirring with a whisk.
Grate the yellow skin of the lemon over the batter and stir through. Cut the chives finely and stir 2/3 through the batter.
Heat the butter in a frying pan and fry 4 small pancakes (blinis) in 3 min. Golden brown and done. Turn them after 2 min.
Make 8 blini's with the butter. Put them on a scale.
Mix the horseradish with the crème fraîche, pepper and salt. Brush the blinis with some crème fraîche.
Divide the salmon into 12 equal pieces and place them on the crème fraîche.
Sprinkle with the rest of the chives and possibly some pepper. Yummy! .
