Chocolate pears with almond

Cut a piece of lemon zest and squeeze out the lemon. Peel the pears, but leave the stalks on it.

Heat the wine in a pan with the sugar, lemon zest and juice until just below the boiling point. Put the pears in and make sure they are underneath. Poach them for about 15 minutes so that they are still firm. Remove the pears from the pan and allow to cool.

With an apple drill at the bottom, remove the cores from the pears, but leave the stalks. Mix the almond paste with the egg yolk and fill the pears with it. Put the pears in the fridge or in the freezer for a good cold.

Melt the chocolate au bain-marie or 2-3 minutes in the microwave at 800 watts. Mix in the rum and the butter.

Brush the pears thickly with chocolate and sprinkle with the almonds. Allow the chocolate to harden the pears in the refrigerator.

Serve a large bread roll ice on each plate and put the pear on it.
