Halve the lemongrass in the length and cut into pieces.

Bring the cream with the lemongrass to the boil in a saucepan with a thick bottom, turn the heat low and allow the flavor to set in for another 5 minutes.

Take the lemon grass out of the pan. Break the chocolate into pieces above the cream and let it melt with stirring. Stir in the butter.

Pour the mixture into a bowl and leave to set in the refrigerator for 1 hour.

Scoop the truffle mixture with a dessert spoon out of the dish and turn 16 oval or round balls between two hands.

Sift the cocoa over a plate and roll the balls through it. Let the truffles in the refrigerator stiffen again.

Serve the truffles at room temperature. Yummy! .
