Semolina pudding with berry sauce
Creamy semolina pudding made of milk, whipped cream, vanilla pod, cinnamon, sugar and semolina with berry sauce of red berries, orange juice and some sugar.

Bring the milk and whipped cream to a boil in a saucepan. Meanwhile, cut open the vanilla pod lengthwise and scrape out the marrow with a knife.

Add the marrow, semolina, cinnamon and sugar.

Bring back to the boil and simmer for 3 minutes with a whisk until a thick paste. Remove the pan from the heat.

Rinse the pudding mold with cold water (do not dry). Pour in the porridge and allow to cool to room temp. Cover and leave to set in the fridge for 3 hours.

Ris the berries (keep some twigs behind) and put the juice and the rest of the sugar in a pan. Bring to boil. Cook for 10 minutes on low heat.

Remove from heat and puree with the hand blender. Push the mixture through a ball sieve with a spoon. Catch the sauce in a bowl and stir in the remaining berries.

Pour the pudding on a dish and pour half of the sauce over it. Serve the rest of the sauce next to it. Bon appétit! .
