Mix the cubes of pear with the lemon juice and the jelly sugar in a thick-bottomed pan and bring to the boil while stirring. Let the mixture simmer for about 5 minutes.

Fill the jam jars up to the edge with the hot jam and spread the vanilla, cinnamon and star anise. Turn the lids on and put the filled pots aside.

Store in a dark, cool place for up to 6 months. Keep the jam in the refrigerator after opening.
