Finely chop the parsley. Cut open the peppers, remove the seeds and dab the peppers dry with paper towels.

Stick small rounds from the pieces of sweet pepper with the apple drill. These become the Christmas balls in the tree.

Halve the avocados and scoop the flesh into the food processor. Sprinkle the lemon juice over it and add the mayonnaise and parsley. Sprinkle with salt and pepper.

Puree the avocado into a thick clear green sauce. Transfer the sauce to a container and place a piece of plastic wrap on the sauce. Rub the air between the foil and the sauce, so the sauce stays green.

Place 2 pancakes per person on a shelf and brush thinly with the avocado sauce. Divide half of the paprika Christmas balls.

Put 1 of these pancakes per person on the other pancakes with sauce.

With the Christmas tree shape, cut out the last pancakes, small Christmas trees. Cover the pile with these Christmas trees.

Place each Christmas tree on a plate with a thin spatula. Spread Christmas trees generously with the rest of the avocado sauce. Garnish with the rest of the paprika Christmas balls.
