Classic kale stew with smoked sausage

Put the kale in a large pan. Pour 250 ml of water per 600 grams of kale. Peel the potatoes and cut them into pieces. Put them on the kale. Sprinkle some salt and bring the kale and potatoes covered over a high heat to the boil. Let the kale dwindle.

Once the kale has more or less shrunken, shred the potatoes and kale. Cook everything covered in 20-25 minutes until done. After 10 minutes, place the smoked sausages on the kale and warm them.

Keep the smoked sausages warm between 2 plates. Pour the kale over a bowl. Mash the kale and potatoes with the pestle and mix. Add the butter and vinegar with a generous splash of cooking liquid. Heat while stirring until it becomes a smooth stew. Add more cooking liquid if necessary. Season the stew with salt, freshly ground pepper and possibly a dash of vinegar. Serve the kale with slices of smoked sausage on it.
