Preheat the oven to 200ºC. Cook the macaroni according to the instructions on the package, but take 2 minutes of the cooking time so that the pasta is just undercooked.

Heat the butter in a (stalk) pan and add the flour. Keep stirring until a roux occurs. Then slowly add the milk and stir with a whisk into a creamy sauce.

Add 100 grams of old and 100 grams of young cheese and stir until it is melted. Season with salt, pepper and nutmeg.

Mix the cheese sauce and ham cubes through the macaroni and scoop in the baking dish. Sprinkle with the bread crumbs and the rest of the cheese. Bake in the oven in about 20 minutes until golden brown.
