Directions

  1. Wash the mussels under running water. Tap the open mussels on the edge of the counter, throw away if they do not close.
  2. Finely chop the shallots, cut the butter into cubes and finely chop the parsley.
  3. Put half of the parsley with the shallot, thyme, bay leaf, wine, vinegar and half of the butter cubes in a large pan.
  4. Add the mussels. Cook them, shaking occasionally, about 5 min.
  5. Put the mussels in a large bowl and remove the thyme and bay leaf.
  6. Bring the cooking liquid to the boil and beat the rest of the butter cubes with a whisk.
  7. Spoon the sauce over the mussels and sprinkle with the rest of the chopped parsley.
