Coconut oatmeal with cranberry compote
Breakfast dish with oatmeal, coconut milk, cranberry compote, caster sugar, coconut chips and a pinch of cinnamon.

Heat a frying pan without oil or butter and fry the coconut chips in 4 min. On a low heat until golden brown. Let cool on a plate.

Put the cranberry compote in a pan and heat for about 5 minutes on low heat.

Meanwhile, bring the coconut milk in a saucepan to the boil with the water.

Add the oatmeal flakes, cinnamon, caster sugar and a pinch of salt. Allow 3 minutes to cook over low heat with stirring.

Divide the oatmeal over deep bowls and divide the cranberry compote and coconut pieces.
