Directions

  1. Cut all vegetables into coarse pieces and fry them in a large bowl with two tablespoons of olive oil, salt and pepper.
  2. Divide the vegetables over four pieces of aluminum foil.
  3. Cut the feta into pieces and spread over the vegetables, and place a sprig of coriander on each package.
  4. Fold the packages closed and grill them on the barbecue in 25-30 minutes.
  5. Salt the fish pieces of about 120 grams and sprinkle with two tablespoons of olive oil.
  6. Place each piece on a piece of aluminum foil, together with two to and a sprig of coriander.
  7. Fold the packages tightly and put them on the barbecue for 20 minutes.
  8. When the cod is tender, open the package and drizzle some olive oil and a few drops of lemon juice.
  9. Divide the vegetables over the plates and put the piece of cod on top of it.
