Directions

  1. Preheat the oven to 200ºC. Divide the zucchini, peppers and onions about two-thirds of a baking sheet. Season with salt and pepper.
  2. Place the frozen rösti next to it and sprinkle with paprika, salt and pepper. Drizzle the vegetables and rosti with olive oil and place the baking sheet in the middle of the oven for 15 minutes.
  3. Remove the baking sheet from the oven and lay the cod on the vegetables. Sprinkle with the chopped thyme, salt and pepper.
  4. Divide the to around and squeeze out the lemon halves over the vegetables and fish. Put the sprigs of thyme in between and put the baking plate back in the oven for about 10 minutes until the cod fillet is cooked.
