Scoop the watermelon, coriander, mint, capers, onion and red pepper together.

Drizzle with lime juice and 3 tablespoons of olive oil and season with salt and pepper.

Dab the cod fillets dry with paper towels, brush with the rest of the olive oil and season with salt and pepper.

Heat a grill pan and grill the cod fillets in golden brown in about 4 minutes.

Serve the fish with the watermelon salsa.
