Cod with zucchini, tomato and feta

Divide the cod into 4 portions. Rub the fish fillets with lemon juice and sprinkle with salt, pepper and flour.

Cross the tomatoes and put them in boiling water for a few seconds. Peel them and divide the tomatoes into cubes.

Heat half of the oil and fry the cod for about 2 minutes per side. Remove the fish from the pan and keep warm under aluminum foil.

Add the rest of the oil to the shortening and fry the onion and garlic for about 2 minutes.

Scoop the zucchini cubes through and bake for about 2 minutes.

Add the tomatoes, thyme and white wine and reduce slightly.

Serve the cod with the vegetable mixture and sprinkle with the feta.
