Coriander rice


A nice mexican recipe. The vegetarian side dish contains the following ingredients: shallots (chopped), fresh coriander (15 g), flat parsley (20 g), olive oil, basmati rice and vegetable stock (of 1 tablet).

Directions

  1. Puree the chopped shallots, coriander and parsley with 2 tbsp olive oil into a smooth puree with a hand blender.
  2. Heat 2 tbsp olive oil in a pan and fry the mash for 5 min.
  3. Add the basmati rice and vegetable stock.
  4. Boil the rice in 15 minutes until done.
  5. Season with salt and pepper..
