Coriander rice
A nice mexican recipe. The vegetarian side dish contains the following ingredients: shallots (chopped), fresh coriander (15 g), flat parsley (20 g), olive oil, basmati rice and vegetable stock (of 1 tablet).

Puree the chopped shallots, coriander and parsley with 2 tbsp olive oil into a smooth puree with a hand blender.

Heat 2 tbsp olive oil in a pan and fry the mash for 5 min.

Add the basmati rice and vegetable stock.

Boil the rice in 15 minutes until done.

Season with salt and pepper..
