Couscous salad


A tasty recipe. The vegetarian side dish contains the following ingredients: olive oil, couscous, lemon (scrubbed), onion (chopped), garlic (finely chopped), boiled beets (grated), ground cumin (djinten), black olives and fresh coriander (coarsely chopped).

Directions

  1. Bring 250 ml water with 1 tbsp oil and a little salt to a boil in a pan. Remove the pan from the heat and stir the couscous through the boiling water. Put the lid on the pan and let the couscous stand for 10 minutes.
  2. Grate the yellow skin of the lemon and squeeze out the fruit. Heat the rest of the oil in a frying pan and fry the onion and garlic gently for 2 minutes. Stir in the beetroot, grated lemon zest and cumin. Heat everything gently for 3 minutes.
  3. Stir the couscous with a fork. Mix the couscous through the beetroot and let everything warm up well. Season the dish with lemon juice, salt and pepper.
  4. Spoon the couscous into a bowl and sprinkle the olives and coriander over it. Delicious with all kinds of braised meat and lamb from the grill.
