Couscous salad with grilled lemon
A tasty recipe. The main course contains the following ingredients: extra virgin olive oil, zucchini (in packets), red pepper (in strips of 1 cm), red onions (in parts), lemons (halved), couscous, baby romain lettuce (in strips), cheese cubes 10% ((200 g), Arla and drained).

Mix 4 tbsp oil through the zucchini, pepper and onion. Heat the grill pan and grill 1/3 of the vegetables in 5 minutes until al dente. Spoon on a plate. Grill the rest of the vegetables in 2 more portions. Finally grill the lemons on the cutting surface in 2 min. Golden brown.

Prepare the couscous according to the instructions on the packaging with the rest of the oil. Stir with a fork.

Mix the grilled vegetables, lettuce, cheese cubes, pepper and possibly salt through the couscous. Spoon the salad on 4 plates and serve with the lemon to squeeze out above it.
