Directions

  1. Prepare the couscous according to the instructions on the package.
  2. Meanwhile cut the aubergine into cubes of 1 cm. Heat the oil in a frying pan and fry the aubergine in 13 min. On medium heat until golden brown.
  3. In the meantime, heat the oil in a frying pan and fry the sausages over medium heat for about 12 minutes until golden brown and done.
  4. Meanwhile cut the fresh mint fine. Stir the couscous with a fork and mix the rest of the oil and 2/3 of the fresh mint through the couscous.
  5. Add the sauce to the eggplant and heat for another 2 minutes.
  6. Divide the couscous over 4 plates and put the sauce on it. Divide the sausage over it and sprinkle with the rest of the coin.
