Couscous with green vegetables


Vegetarian Mediterranean couscous with green beans, snow peas, broccoli, green olives and cream cheese with herbs.

Directions

  1. Prepare the couscous according to the instructions on the package.
  2. Remove the stalk and the tip of the green beans. Halve the green beans and snow peas.
  3. Divide the broccoli into small florets. Cut the stump into pieces.
  4. Boil the vegetables in a pan with plenty of boiling water and salt in 3-4 minutes until al dente. Drain afterwards.
  5. Halve the olives. Spoon the vegetables together with the olives through the couscous. Crumble the cream cheese over it.
  6. Season to taste with pepper and salt.
