Sirloin steak with herb butter and thick fries

Stir the butter into a bowl. Grate the yellow skin of a cleanly scalded lemon above it.

Press the garlic above it. Slice the parsley.

Mix the lemon zest, the garlic, parsley and sea salt with the butter.

Spoon the herb butter on a double layer of cling film and roll up into a sausage. Put in the refrigerator until use. Turn on the deep fryer.

Brush the entrecotes with the oil and sprinkle with salt and pepper. Heat the grill pan and grill the entrecotes 4-5 minutes. Turn halfway.

Remove from the pan and leave to rest for 5 minutes under aluminum foil. Meanwhile, fry the fries in the fryer until golden brown.

Divide the entrecotes over the signs. Remove the cling film from the herb butter and cut 2 slices per sirloin steak. Divide them over the meat.

Serve with the fries.
