Pokébowl with cauliflower rice
Low-carbohydrate pokébowl with cauliflower rice, rice vinegar, salmon, ginger, radish, beet, avocado and mango.

Put the cauliflower rice in a colander. Pour over boiling water, drain.

Mix the cauliflower rice with the rice vinegar and 1 tbsp ginger juice (for 2 persons) from the jar of pickled ginger. Spread over deep plates and allow to cool down until used.

Cut the salmon into cubes of 1 cm and let marinate in the soy sauce.

Meanwhile, cut the radishes into quarters. Mix the beetroot with the rest of the rice vinegar.

Halve the avocado, remove the kernel, scoop out the avocado with a spoon and cut into cubes. Halve the big pieces of mango.

In components, divide the beetroot, radish, salmon, mango, ginger and avocado in a round over the plates with cauliflower rice.

Make sure that the cauliflower rice is still visible between beetroot and avocado so that there is a color gradient.
