Couscous with white cheese, spinach and tutti frutti.

Stir in a large bowl through the dry couscous. Pour the boiling water over it.

Let the couscous stand for 10 minutes until all the water has been absorbed. Chop the shallot.

Heat the olive oil in a wok or skillet and gently fry the shallot for 2 minutes.

Add the spinach in portions and let it shrink to a high heat. Continue until all the moisture has evaporated.

Slice the coriander. Mix the couscous with the coriander and the cheese cubes, season with salt and pepper.

Serve the couscous mixture with the spinach next to it and sprinkle the cheese cubes over the dish.
