Mix the cranberries with the orange juice in a saucepan and bring to the boil. Add the sugar, port, cinnamon, cloves and thyme and simmer for about 10 minutes at a low setting.

Puree the sauce briefly with a hand blender. Take the pan from the heat source and pour the sauce with the herbs in a pot. Turn the lid on and turn the filled pot upside down. Store in a dark, cool place for up to 6 months.

Keep the sauce in the refrigerator after opening.
