Creamy carrot soup with a hint of orange.

Chop the onion and peel and grate the ginger.

Heat the oil in a large soup pot. Fry the onion and ginger for 5 minutes. Stir occasionally.

Meanwhile, peel the winter carrot and cut into slices. Slice the garlic.

Add the winter carrot and garlic and cook for 2 minutes.

Add the bouillon tablet, water and the coconut milk. Bring the soup to the boil and simmer for 15 minutes until the winter carrots are tender.

Purée the soup with the hand blender or in the food processor. Squeeze out the orange.

Stir the orange juice through the soup and season with (chili) pepper and salt. Yummy! .
