Heat the oil and fry the shallots glassy.

Spoon the shallots, the pulp of the avocado, the stock, parsley, salt and pepper in a blender and mix into a creamy whole.

Heat the soup to a low setting for about 6 minutes (do not boil) and mix in half of the shrimp.

Divide the soup over 4 bowls, sprinkle with extra parsley and put the rest of the shrimp on it.
