Directions

  1. Pour the whipped cream into a high (size) cup. Cut the vanilla pod lengthwise and scrape out the marrow with the tip of a knife.
  2. Add with the sugar to the cream. Mix the cream with the mixer, add the ricotta and mix for another 10 seconds.
  3. Keep 2 strawberries per person. Puree the raspberries with the rest of the strawberries and the sugar with the hand blender.
  4. Cut the retained strawberries into quarters.
  5. Divide the fruit puree and strawberry tarts over the bowls or (cocktail) glasses and spread the cream-ricotta mixture over it.
