Crispy salad


Salad with apple, onion, zucchini, white cabbage, pickles, peanuts and yogurt dressing.

Directions

  1. Grate the apple, onion, zucchini and cabbage on the coarse grater of your food processor (or by hand) and put everything in a bowl.
  2. Cut the stalk of the red pepper, cut in half lengthwise and remove the seeds with a sharp knife. Cut the red pepper finely and add.
  3. Clean the lemon and squeeze out the juice. Cut gherkin finely and mix yogurt, gherkin and mustard with a little lemon juice and a pinch of pepper.
  4. Mix this with the grated vegetables, olive oil and most of the parsley into a delicious creamy mixture.
  5. Chop or stamp into a mortar peanuts (a hand is 25 g) in small pieces. Sprinkle leftover parsley and peanuts over the salad for a tasty bite.
