Crispy salad

Grate the apple, onion, zucchini and cabbage on the coarse grater of your food processor (or by hand) and put everything in a bowl.

Cut the stalk of the red pepper, cut in half lengthwise and remove the seeds with a sharp knife. Cut the red pepper finely and add.

Clean the lemon and squeeze out the juice. Cut gherkin finely and mix yogurt, gherkin and mustard with a little lemon juice and a pinch of pepper.

Mix this with the grated vegetables, olive oil and most of the parsley into a delicious creamy mixture.

Chop or stamp into a mortar peanuts (a hand is 25 g) in small pieces. Sprinkle leftover parsley and peanuts over the salad for a tasty bite.
