Preheat the oven to 200 ° C.

Cut the caps of the bread. Cut the bread into 8 slices.

Toast the bread slices during preheating of the oven for about 4 minutes.

Meanwhile, melt the butter in a saucepan.

Add the flour to the butter. Leave to cook until the flower starts to color lightly (roux), stirring on low heat, this takes 5 min.

Add the milk to the butter mixture while stirring and bring to the boil. Add the nutmeg, pepper and salt, and cook for 5 minutes on low heat until bechamel.

Brush each slice of bread on 1 side with ½ el mustard.

Place 4 slices with the mustard side up on a baking sheet covered with parchment paper. Divide half of the bechamel and the cheese over it.

Place a slice of ham on top and cover with the rest of the slices of bread with the mustard side down.

Spread the rest of the bechamel over it and sprinkle with the cheese. Bake for about 10 minutes in the middle of the oven.
