Heat the olive oil in a pan. Allow the butter to melt and stir in the flour with a wooden spoon. Stir until the mixture is released from the bottom. Add the milk little by little, stirring continuously into a bound sauce.

Beat the eggs in a deep plate. Sprinkle the breadcrumbs on another plate. Form croquettes of the ham mixture with wet hands. First pass through the egg and then through the breadcrumbs.
