Puree the trout fillet and crème fraiche and season with pepper.

Keep some pieces of trout for the garnish. Put the capers through and put away cold.

Preheat the oven grill. Brush the slices of baguette on both sides with a little olive oil and put them under the grill for a few minutes.

Turn them over and fry the other side golden brown. Allow them to cool down and put a spoon of trout mousse on it.

Garnish with extra capers, pieces of trout and freshly ground pepper.
