Directions

  1. Preheat the oven to 200 ° C. Spread the sheets of filo pastry on the work surface and cut each sheet into 4 squares. Spread 4 squares of filo pastry on the baking tray with parchment paper. Brush them thinly with butter. Place 4 sprigs of chives on each sheet, 1 cm apart and all in the same direction. Put another square of filo pastry on top and also brush with butter. Bake the filo pastry in the oven in 8-10 minutes until golden brown.
  2. Meanwhile cut the salmon fillet into 4 equal pieces. Heat the remaining butter in a frying pan and place the pieces of salmon on the skin. Sprinkle with salt and pepper. Sprinkle with some lemon juice. Put the lid on the pan and let the salmon just cooked in 6-8 minutes.
  3. Put the basil with the yogurt and some salt and pepper in the blender and mix everything while turning on the highest setting until a green sauce. Dilute the sauce with 1-2 tablespoons of water if necessary.
  4. Place the filo pastry slices each on a plate. Remove the skin from the salmon and place in the middle of the filo pastry. Spoon some of the sauce and garnish with chives.
