Rinse the mussels thoroughly and take out the broken ones. Drain and place in a large pan with the bay leaf, thyme, onion and garlic.

Leave to come to the boil covered and steam the mussels open in about 10 minutes. Put them in for a while and let them cool down a bit.

Always break the empty shell and place the stuffed shells in an oven dish.

Grind the bread with the herbs, the cheese and the butter and season with a little salt and pepper.

Preheat the oven grill. Divide the bread mixture over the mussels and let them gratin under the grill in about 2 minutes. Stay with it, because it can burn quickly! .
