Cucumber Soup
Cucumber soup pepper, Greek yogurt and coriander.

Cut the cucumber in half lengthwise and remove the seeds. Cut the coriander leaves fine.

Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife. Cut the pepper finely.

Put the cucumber and coriander in a blender or food processor and grind.

Add the yogurt and season with salt. Add the red pepper. Mix well.

Squeeze the lime and season the soup with the lime juice. Add water if the soup is too thick.

Leave to cool in 1 hour in the refrigerator. Pour the soup into bowls and drizzle with the oil.
