                                Cut the cucumber into 8 equal slices. Scoop out the seeds of each slice.

                                Beat a dressing of the oil, the lime juice and the rack. Stir in the red pepper and chopped coriander.

                                Spoon the dressing through the rice and mix in the pineapple and spring onions.
 - 
                                Spoon the rice salad into the cavities of the cucumber.
 - 
                                Put a piece of trout on it and garnish with a coriander leaf.
