Cucumber-mint salad
A tasty recipe. The vegetarian side dish contains the following ingredients: cucumber, mint (only the leaves), olives (Taggia, a 180 g), extra virgin olive oil, white wine vinegar, garlic (pressed) and sugar.

Halve the cucumber in the length and remove the seeds with a teaspoon. Cut the cucumber into cubes of approx. 8 mm (brunoise). Cut the fresh mint finely and mix with the cucumber. Add the olives. Season the salad with salt and pepper.

Beat a dressing of the oil, vinegar, garlic and sugar. Season with salt and pepper. Divide over the salad.
