Cucumber salad with onion
Salad with cucumber, sesame oil, red onion, ginger, garlic and parsley

For the dressing, mix the vinegar, sugar, olive and sesame oil in a small bowl.

Halve the onion and cut the halves into half rings as thin as possible. Add to the dressing and marinate for a minimum of 30 minutes.

Peel the ginger and cut finely. Slice the garlic too.

Rub the garlic and ginger in the mortar into a paste and add to the dressing.

Peel the cucumbers and cut into slices as thin as possible or scrape the cucumbers with the cutting part of a grater.

Add the dressing and let the cucumber covered in the refrigerator taste in 15 minutes.

Remove the leaves of parsley from the twigs and cut finely.

Scoop the parsley through the cucumber salad and serve immediately.
