Cucumber salad with sesame chili dressing


Salad of cucumber, sugarsnaps, bean sprouts, coriander and sesame seeds.

Directions

  1. Cook the sugar snaps 3 min. Drain and rinse cold under running water.
  2. Meanwhile, cut the cucumbers into long thin slices (or use a cheese slicer) and place in a bowl.
  3. Cut the coriander coarsely and add to the cucumber together with the sugarsnaps and bean sprouts.
  4. Mix the sesame oil, olive oil and vinegar into a dressing and mix with the vegetables.
  5. Season with (freshly ground) pepper and possibly salt. Chop the peanuts coarsely and sprinkle over the salad. Serve immediately.
