Cucumber sushi with salmon filling
Suhi of smoked salmon, nori, hüttenkäse, wasabipasta, sushi ginger, cucumber and soy sauce.

Cut the salmon very finely. Tear the nori sheet in small pieces. Slice the sushi ginger.

Mix the cottage cheese with the wasabi paste, sushi ginger and 1 tbsp of the sushi ginger (per 20 portions).

Spoon the salmon and nori through the cottage cheese mixture.

Cut the cucumber into slices of 2 cm.

Remove the seeds from each slice with a fork, but keep the cucumber edge intact. (insert the fork into the seed moldings and turn around).

Fill the cucumbers with the salmon-hüttenkäs mixture.

Spread over a nice plate and serve with chopsticks and the soy sauce.
